Parmesan Mashed Potato Pancakes

With Thanksgiving right around the corner, I am guessing that most people will have an abundance of Mashed Potato leftovers.  At my house, we eat a lot of Mashed Potatos (My wife is addicted), so I have always looked for new and inventive ways to use the leftover Taters.  Well last night I tried something new and it turned out fabulous.  I call these my Parmesan Mashed Potato Pancakes.

Ingredients:

Mashed Potatos

Chobani Plain Non Fat Greek Yogurt

Salt Pepper

Parmesan Cheese

Extra Virgin Olive Oil

Panko Bread Crumbs

In a mixing bowl combine leftover Mashed Potatos, Chobani Plain Greek Yogurt, Parmesan Cheese, Cracked Pepper, Salt, and Panko Bread Crumbs.  Mix all ingredients together until the mixture has enough body to be able to form patties.  The amounts of each ingredient depends on how much leftover Mashed Potatos that you have left.  Once you have formed your Potato Cake Patties, heat enough Extra Virgin Olive to coat your favorite stove top pan.  Preheat pan on Medium High heat.  Once heated, drop them onto the pan and let them cook for approximatly 5-8 minutes per side.  Flip over only once if possible.  Once they are nice and crispy on each side, you will have a great tasting, different side dish to serve with bacon and eggs for breakfast, or with a nice Steak and Asparagus for a fancy dinner.  Give these a try and let me know how you like them!

Easy Chicken Enchiladas

We couldn't wait to take a photo before digging right in... YUM!

At the end of the day, I found myself sitting at my desk, thinking that I really need is a good comforting home cooked meal.

I told myself that I was going to cook the first thing that popped in my head, and that turned out to be Chicken Enchiladas.  This dish is so simple to make that I call them my Easy Chicken Enchiladas.

Ingredients:

Diced Bell Peppers

Small Diced Onion

Garlic

Tomato

Chicken Broth

Rice

Chicken

Mozzerella Cheese

Las Palmas Green Enchilada Sauce

Mission Flour Tortillas

First, Dice your favorite Bell Peppers, Onion, Garlic, and Tomato and set aside.  In a side pot, boil some of your favorite pieces of Chicken.  I used Boneless Chicken Breasts.  Boil until they are cooked through and give them a rough chop.  Add them to the Peppper/Onion/Tomato/Garlic bowl you already have ready.  In another side pan boil a couple cups of Chicken Broth and add minute Rice to this until complete.

Now it is time to assemble.   Take your Tortilla, add a small amount of Cheese, then Rice, then Chicken/Vegetable mixture, then pour some enchilada sauce over the top and finish off with Cheese.  Roll into a wrap and put into lasagna pan.  Repeat this process until all of your ingredients are gone.  When you are finished with this step, pour the remainder of your Las Palmas Green Enchilada Sauce over the top of the finished Enchiladas, and finish off with lots of Cheese.

Now Bake for 30 mins of 400!  They will turn out perfect and make GREAT leftovers!  Enjoy.

Where is the best BBQ located?

My favorite food is BBQ.  This is no secret to my friends and family.  I love everything about it.  Combining fire, Meat and Spices has proven to be my kryptonite.  I love making it at home, but my favorite thing is eating at different restaurants in different regions of the United States to see all the different ways it can be prepared.  I have had wet BBQ, dry BBQ, sweet BBQ, spicy BBQ and all varieties in between.  It seems like BBQ is served one of two ways.  It is usually served either wet or dry and served with either Vinegar based or Tomato based BBQ sauce.  I enjoy both wet and dry in different ways and enjoy both Vinegar and Tomato based sauces.  It just depends on my mood.  (I told you I love it all!)  One thing I do know for sure is that I love trying all the different kinds of BBQ and I love going to new BBQ places wherever I am traveling to.

Some of my favorite BBQ staples are BBQ Brisket, Pulled Pork, Baby Back Ribs, Smoked Chicken, Smoked Sausage.  Wherever I go I like to try a combo platter of all the Meats, with BBQ beans, Fries, and Slaw to compliment.

From my travels, I have been fortunate enough to have sampled the best BBQ from Indiana, North Carolina, South Carolina, Alabama, Tennessee, Missouri, Kansas, Arkansas, Mississippi, and Texas.

As a central Indiana guy, my favorite local places are are GT Souths Rib House in Indianapolis and Big Hoffas BBQ in Westfield.  My favorite BBQ from the road I must say was from Arkansas and Texas.  I tried several spots in both states and they were all fabulous.  They definitely know how to do it right down South!

Sweet & Spicy Chicken Salad

One thing that I really love is Salad.  I love pretty much all Salads.  I love Garden Salads, Ceasar Salads, Fruit Salads, Brocoli Salads, Spinach Salads, Tuna salads, Chicken salads…etc..etc.  The list goes on and on.  The only problem with chicken salad and tuna salad is that it is usually made with Mayonaise, and therefore rather unhealthy.  Well I have found a way around it that does not sacrifice any of the taste.  (Believe me, I work with some big eaters, and they all loved this one)

Ingredients

Meat from 1 Rotisserie Chicken (Rough Chop)

2 Medium Sized Klaussen Pickles (Fine Chop)

8 sliced Jalapeno Slices from Jar

1/2 of a Honey Crisp Apple (Fine Chop)

4-5 Hardboiled Egg White (Rough Chop)

1/2″ Can of Rotel Tomatos

3/4 – 1 Cup of Chobani Regular/Plain Greek Yogurt

1/4″ Cup Spicy Sabra Hummus (Optional)

Chobani Plain Greek Yogurt is a great alternative for Sour Cream and Mayonaise.  It tastes great and is incredibly healthy which is perfect for keeping these types of Salads healthy. 

Mix all ingredients well in mixing bowl and serve with Crackers.  It combines sweet and spicy to create a great healthy Chicken Salad.  It is a great Appetizer or Salad to serve during a party or for the big game.  Enjoy!

 

Fogo De Chao

There are certain days in every mans life that they do not look forward to, and turning 30 is one of those days.  Well that day happened for me this Friday.  My wife, Sarah, knew she had to do something to lift my spirits and she knew the one thing that would do that would be a great meal.   So she had her wonderful mother Barbara and step dad Karl come over and take our son for the night so that we could enjoy a night out to celebrate my birthday.  So off we went to a still unknown (by me) destination.  I was like a kid in a candy store.  As soon as I saw where we were going (Fogo De Chao in downtown Indy), I lit up with happiness – I was like a kid in a candy store.  As I walked into the place, I saw men walking around with huge skewers of Beef, Pork, Chicken, Sausage……..It was like this place was made just for me.

You start off your meal with a trip to the Salad Bar, which happens to be the best Salad Bar I have ever been to.  It was filled with so many tasty treats including; Marinated Peppers, Hearts of Palm, Asparagus, Artichokes, Olives, Smoked Salmon, as well as fine Cheeses and Antipasto meats- and all of it is packed with flavor.

Then they issued us our meat card.  If you have your card on red, the servers do not bother you.  If you turn your card over to green, the meat express pulls in and you are offered some of the finest meats I have ever eaten.  We ate everything from Filet Mignon, Top Sirloin, Prime Rib, Pork Tenderloin, Chicken, Sausage….and the list goes on and on.  The quality is what I could not believe.  You tell the servers exactly how you want the meat cooked, and they serve you as much as you would like of all of these fine cooked meats.  This is all served with Garlic Mashed Potatos, grilled Polenta Cakes, and sweet Plantanes.

I was in my heaven.  After stuffing myself to the max (you know we also had dessert- a papaya ice cream for me, hot molten chocolate cake for Sarah), it was time to leave and my wife told me that I had a smile on my face that she had never seen.  I was so happy and content because I just had the best dining experience of my life.  I am just sad it took me 30 years and 1 day to find this place.  I am so glad that I have a wife who knows me so well and I will be going back as many times as I can.  If you ever have the chance to experience Fogo De Chao, I highly recommend going………just don’t forget to call and invite me!

This morning on my way to work a thought popped into my head…….What is my favorite Cheese?  The more I thought about the subject, the harder the answer was for me to come up with.  With so many great options, and so many choices, it genuinely is a really tough answer for me to come up with?  What is your favorite Cheese?
